Headscratcher question of the day

Now don't laugh I barely remember what little I learned in my high school and college chemistry classes and I'm feeling punchy because I didn't eat breakfast

It's not possible to take the oxygen out of water? right? because that would leave only the hydrogen right?

A patron is asking me how to do it. really.
